Commence the meal with elemen Trio Appetiser 元素台味三部曲, experience the diverse tastes of Taiwan in this appetiser trio comprising sesame shroom aspic covered in vegetarian oyster sauce and topped with ginger, smoked seaweed sausage wrapped in bean curd skin with a smokey cheese sauce, and crispy sweet purple potato roll topped with edible flowers, on an ohba leaf.
As a delightfully crunchy and vibrant accompaniment, Purple Cabbage Salad 紫包菜沙拉 features a lightly dressed slaw of purple and round cabbage, tossed in truffle pâté and drizzled with sesame yuzu dressing. Next, relish in the comforting warmth of Taiwanese Hot & Sour Soup 台式酸辣汤 simmered with dried mushroom, enoki mushroom, julienne of bamboo shoot and sauerkraut.

Inspired by Taiwanese fried chicken, our Popcorn Lion's Mane 香脆盐酥'鸡' is made from farm-totable fresh lion's mane mushroom, lightly coated in a batter with preserved bean curd, seasoned with an authentic blend of salt, white pepper and five spice for the extra oomph of flavour.
Taking center stage is the beloved Taiwanese classic, Taiwan Braised Shroom Rice 台式卤菇饭. This iconic dish is given a meatless twist—savour a hearty bowl of braised shroom rice topped with a 62degree egg, dried mushroom, broccolini, chocolate oyster mushroom, and 'Takuan' (Japanese pickled radish).
