Healthy Recipe of the Week
I have shared a few salad recipes that past couple of months so this week's healthy recipe is a salad dressing. Try one of the past salad recipes with this new dressing or add the dressing to any salad of your choice.
Like Emma Lovewell, I have also had fun this summer experimenting with different salad combinations and tasteful dressings. Notoriously known for my "brown thumb", I surprisingly started a small garden on my balcony this summer. I had the most success with my Thai Basil!

Simple Salad Dressing
Ingredients
- 1/4 cup Extra Virgin Olive Oil
- 1 teaspoon Tahini
- 1 teaspoon Dijon Mustard
- 1 tablespoon Sweet Vinegar (*may substitute with Apple Cider Vinegar and a teaspoon of Honey)
- Salt and Black Pepper, to taste
- Fresh Herbs of choice (Basil, Mint, Oregano, and Thyme are some of my favorites!)
Directions
Whisk all ingredients together in a small bowl until combined. Enjoy on any salad of your choice!
Store remainder in an airtight jar for up to two (2) weeks.
Don't forget to tell everyone you serve the salad to that you made the dressing from scratch!
