Barbecue Chicken Quinoa Salad Ingredients - 1 1/2 cups Quinoa (cooked) (*may substitute with Farro, Bulgar, or Brown Rice, or combine all three)
- 1/2 cup Corn (fresh, cut from the cob)
- 1/2 cup Black Beans (rinsed and drained) (*may substitute with other beans of choice)
- 1 cup Barbecue Chicken (shredded) (*may substitute for Extra Firm Tofu, cubed, for a vegan/vegetarian option)
- 1 Avocado (chopped)
- Salt and Black Pepper, to taste
- 1/4 cup White Cheddar Cheese (shredded) (*may substitute for Almond or Cashew Cheese for a vegan/vegetarian option)
- Barbecue Sauce, to taste
- 2 Scallions (chopped)
- Fresh Cilantro, for garnish
Directions In a large bowl, toss together the quinoa, corn, black beans, chicken (or tofu) and avocado. Season with salt and pepper. Transfer the mixture into a serving bowl and top with shredded cheese, barbecue sauce, scallions and cilantro.
