Happy Sunday everyone ! Today I am sharing a recipe that is for Mom's Favorite fish dish. While growing up we would take trips to New Orleans to visit Dad's family . She and Dad would have a date night at her favorite restaurant Galatoiers in the French Quarters . I would always here theses amazing visit and recipe. Today's it's a simple version of this favorite dish.

Galatoire's Trout Meuniere Amandine

  • 4 (6- to 8-ounce) trout fillets
  • Salt and pepper, to taste
  • 1 cup milk
  • 1/2 cup flour
  • Oil
  • 1 cup butter
  • 1 cup sliced almonds
  • Juice of 1 lemon
  • 1/2 tablespoons chopped parsley
  1. Sprinkle fillets with salt and pepper, dip into milk and roll in flour.
  2. Fry in 3/4 inch of hot oil in a shallow skillet until golden on both sides.
  3. Remove and keep warm.
  4. In a separate pan, melt and whip butter until brown and frothy.
  5. Add sliced almonds and lemon juice.
  6. Place each fillet on a heated plate and pour sauce over it.
  7. Sprinkle with chopped parsley.

So I am serving Salad , Rice and vegetables with fresh baked rolls.

Louisiana businessman John Georges is the majority owner of Galatoire's and Galatoire's "33" Bar & Steak. The two restaurants are also owned and partly operated by several descendants of the Galatoire family."One Friday, President Ronald Reagan placed a call to former U.S. Senator J. Bennett Johnston, who happened to be waiting in line for a table at Galatoire's. After the President's call ended, Senator Johnston graciously returned to his position in line."

Family Discussion and Update:

Today at the table it's jus my hubby and Me . My son's away at college and doing okay. We are blessed that he's healthy still since he's in the dorm. And the COVID -seems to have level out in town. The Town office is back open to the public and we are trying to get the rest of the town open and back to normal. It would be nice if we could plan a Halloween Trick a Trunk for the kids this October. Since last year was cancelled. But with closing of local school it might not be possible.

Today is also National Grandparents Day ! Celebrate this with the ones you love. My son was lucky too spend time with my parents before they passed away last year. It meant so much to him and them.
