Blistered Tomato Bruschetta
Ingredients
- 2 tablespoons Extra Virgin Olive Oil
- 1 pint Cherry Tomatoes
- 2 Garlic Cloves (minced)
- 1/4 teaspoon Kosher Salt
- Pinch of Red Pepper Flakes
Directions
In a cast iron pan over medium-high heat, heat the olive oil and cherry tomatoes until they start to blister and burst (about 8 - 10 minutes). Turn off the burner and stir in the garlic, salt, and red pepper flakes. Mash the tomatoes with the back of a fork. Serve over whole-grain toast.
Yields: 4 servings
