Today's Bible Reading- 2 Corinthians Chapters 10-13 and Galatians Chapter 1.
Good morning, my friends. I hope you're well. Our forecast for today: 60°, sunny with a few clouds, 10% chance of rain, iffy air quality, winds are from the southwest at 8 miles per hour, and humidity is sitting at 82%. Current real feel is 33°.
Well, happy Friday. I'm in need of coffee. Pardon me while I refill my mug.
Yesterday I made a switcheroo with supper. I got back from the store and I was just done in. Wiped out. I had two options running in my head for supper. I could make the scheduled sloppy joes, or I could make chili and cornbread. The chili would be my own concoction.
I asked Mom her thoughts and she didn't care. Either one was fine with her. I texted Pop and asked him. He said it was a hard decision but he was leaning more towards chili. Chili it was. To say that it was a hit is an understatement. Mom liked it so much she told me I could make it any day of the week. So, it is Mom approved. Yay for me. In case you're wondering about my Mom-approved recipe, here it is:
Lizzi's Chili
1 pound ground beef
1 onion, chopped
1 can Bush's Chili Magic, Campfire Style
1 can Bush's Chili Beans (Pinto, not Kidney) in Spicy Chili Sauce
1 can Casa Mamita Tomatoes with green chiles (Aldi's version of Rotel), undrained
Brown the ground beef with the onion until the beef is cooked through and the onion is translucent. Add the Chili Magic, beans and tomatoes. Stir until mixed together and then cover and simmer for about an hour, stirring occasionally.
I served this with Krusteaz gluten free honey cornbread. I made the corn muffins.
It's a hearty chili. There's barely one serving left. I still have some cornbread left, though. The mix made 12 corn muffins.
Mom asked me to write the recipe down so that in the future I could make the same recipe again. That's how much she liked it.
Today is Friday, so I'll be focusing on ledgers and bills. I went to the post office yesterday to get boxes and didn't realize until I got home that the lady gave me the wrong box sizes. I'll have to go to the main post office today and see if I can find some boxes. Goodness.
