I like following what's happening with insect foods, and much is. Here are some recent examples from the press but also from academic journals.

Tyson makes first move in insect protein sector: Tyson Foods is working with insect-based protein producer Protix to build a Protix plant in the US to supply Tyson with insect larvae for use in feedstock and pet food for the first time while taking a minority stake in the Dutch company to support its global growth.
