Today's Bible Reading- Revelation Chapters 16-19.
Good morning, my friends. I hope you're well. Our forecast for today: 61°, 10% chance of rain, mostly cloudy with some sunshine, and air quality is solidly in the yellow. Boo. I'm not sure why our air quality is poor. The sinuses are really feeling it, though. I also feel as if I've been drugged.
Gracie has made peace with the body pillow now. She took a nap on it yesterday. I thought I was going to have to knock her off to go to bed last night. Not so, but she's snuggled up against it right now, napping away.
It looks as if we had some rain early this morning. I wouldn't know. I slept in until 6:30! Mom didn't wake up until almost 8:30. Both of us feel drugged and fuzzy brained.
Pop is coming in a day early, so I thought I'd try out our new pressure cooker. I'm going to make Thai sweet chili pork bowls. Simple fare. I have most of the sauce ingredients. I can switch out the mushrooms and replace them with zucchini. I have plenty of jasmine rice I can cook up. The new pressure cooker is much larger--8 quarts--than the old one, so I can't make small meals in it. I'm wondering if Pop was thinking we'd do meal prep with it like he does. He makes one big batch of something once a week and then eats it every day. We don't really do that here. I could cut the meal cooking down to two or three meals and have leftovers. That might work. I don't know. Once I've made a meal with this particular new appliance, I'll have a better understanding of what I can and can't do with it.
Another thing I need to do today is pick up our mail. I forgot to cancel the mail hold, so we've been enjoying a week with no mail. That'll change today. Poor mom. She's going to have a weekend of shredding ahead of her.
Balancing ledgers and grocery shopping are also on the list of things to do today. I'll do my best to finish everything that needs done today, but I may have to move a couple of things to tomorrow. Especially since I see a trip to Walmart on my radar today. Boo. The earlier I can get out, though, the quicker I can get things done and get home to make supper. According to the recipe, I can have home-cooked Thai food in about 30-40 minutes. We'll see.
