Happy Tuesday ! Today's post is about Birthdays on Holidays. My Birthday and My Mom has shared the Thanksgiving holiday many times. The family story is that i was born on Thanksgiving morning - so that is my story !
How do We celebrate a Holiday birthday ? - That meant school was on a holiday break. We had to celebrate early with school friends.
- Family and friends was out of town for the holidays. So small family parties during the holiday week.
- Mom always wrapped my gifts in Birthday paper. Others didn't get the Hint sometimes. As well as Birthday cards .
- Thanksgiving was a family traveling day ! So we celebrated with a large familt Birthday breakfast. Before leaving the house.
- Where ever we celebrated we always had a birthday table set outside. Not only Mom and i share the holiday but I have other family members sharing the week with us. So we all could celebrate together.
- As an Adult. Mom and I would have a family breakfast while watching the Rose bowl. And getting ready for the day.
- Since COVID we stayed home and when's Moms birthday fell on the holiday : I cooked the holiday meal and cake.
November/ Thanksgiving birthday is not so bad. My Sister, Hubby and Father N law all share December birthdays. Lisa Mom's Lemon Birthday cake : - 1 box lemon cake mix without pudding in the mix
- 4 eggs
- 1 small box instant lemon pudding
- 3/4 cup vegetable oil
- 3/4 cup water
- Glaze:
- 2 cups powdered sugar
- 1/3 cup lemon juice, you can also use orange juice or lime juice.
- 2 T. vegetable oil
- 1/2 tsp. lemon extract (optional)
- 1/2 tsp. butter flavoring (optional)
- Combine the cake mix, oil, eggs, pudding mix, and water.
- Pour the batter into a sprayed 9" x 13" pan.
- Bake for about 25 minutes in a 350-degree oven.
- While cake bakes, mix the glaze ingredients.
- To test if the cake is done, a cake tester or toothpick should come out clean, the top should spring back when touched lightly, and the cake should pull back slightly from the edges of the pan. Do not underbake.
- While the cake is still hot, use a fork to poke holes all over the cake.
- Pour the glaze on the hot cake. Use a rubber spatula to coax the icing into holes.
This year my birthday is tomorrow and Mom's birthday would haven been Saturday this year - in her honor I am making Lemon cake for Thanksgiving dessert. Lisa
